Ingredients
- For the filling:
- 4 cups peaches, ripe, peeled, pitted, and sliced
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
For the cobbler:
- 1/2 cup butter unsalted, cubed
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk
- ice cream, optional, for serving
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Add the peaches, 1/2 cup of the sugar, the cornstarch, the lemon zest, and the lemon juice to a medium-sized saucepan over medium heat.
Step 3 –Bring the mixture to a simmer for 5 minutes. Stir continuously until the peaches start to soften.
