Spaghetti Salad

This isn’t your ordinary pasta salad. In fact, we might even go so far as saying that Spaghetti Salad is fancy (but don’t worry, it’s so, so simple). Just look at it! The way the bouncy pasta noodles are swirled together with the crunchy, juicy veggies is just beautiful. And you can’t forget the tangy Italian salad dressing, the spicy pepperoni, and the salty parmesan cheese to ensure it tastes as good as it looks. So, if you’re looking for a way to impress without working up a sweat, the eye-and-taste-bud-appealing Spaghetti Salad is the delicious way to go!

Ingredients

  • 1 (16-ounce) package spaghetti, broken into thirds
  • 1 cucumber, diced
  • 1 green pepper, diced
  • 10 ounces grape tomatoes, halved
  • 1/2 cup red onions, diced
  • 1 cup pepperoni, diced
  • 1 (16-ounce) bottle Italian salad dressing
  • 1/3 cup fresh basil, chopped
  • 2/3 cup parmesan cheese, grated

Directions

Step 1 –In a large pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions.

Step 2 –Drain the cooked spaghetti and rinse it with cold water to stop the cooking process.

Step 3 –In a large bowl, add the cooked spaghetti, the cucumbers, the green peppers, the tomatoes, the red onions, and the pepperoni.

Step 4 –Add the dressing to the salad mixture and toss to completely coat.

Step 5 –Add the basil and the parmesan to the salad mixture and toss to combine.

Step 6 –Cover the bowl and refrigerate for at least 2 hours and up to overnight.

Step 7 –Serve.
